Splited Olives from the Vallée des Baux de Provence P.D.O.

A living tradition in the Vallée des Baux de Provence, these olives, full of sun, are hand-picked. They are enjoyed as of the first days of September. The pulp is slightly burst (splited) to enable the wild fennel, picked in the Alpilles, to flavour the flesh. Prepared the French way, they stand out from other olives because they have undergone no fermentation.
Two varieties are recognised for this Protected Designation of Origin (P.D.O.): Salonenque and Béruguette (also known as Aglandau).
An olive just perfect for the aperitif with its anisated flavours! Taste them... you will never forget them.
